Long Paddock Cheese & The Cheese School is a small-scale Australian artisan cheesemaker located in Castlemaine, Victoria, on Dja Dja Wurrung country. Founded in early 2021 by Ivan Larcher and Alison Lansley, the business is recognised as one of the best in Australia. Its globally-renowned cheesemaker, Ivan Larcher, heads a team creating hand-made cheeses mainly in the French style with an Australian identity, using certified-organic cow's milk from a nearby family farm.
The purpose-built Fromagerie at The Mill Castlemaine processes milk into soft and semi-hard cheeses and fresh dairy products. An onsite shop sells these products. The integrated Cheese School offers professional artisan cheesemaking and dairy training for industry professionals and enthusiasts. The business is embedded in the Castlemaine community, employing local staff and supporting local events. Products are available at the farm gate shop, Victorian farmers markets, retailers across Australia, and via a monthly cheese delivery club.
