About
Largo Brae grows consciously-grown specialty mushrooms in the Jamberoo Valley on Dharawal Country. The farm is run by Amos and Gemma, who met at the University of Sydney and are passionate about sustainable food systems. They focus on producing quality mushrooms with minimal environmental impact, using small amounts of water, energy, and land.
The farm adopts a circular approach, turning local waste materials like hardwood sawdust, spent beer grain, and coffee chaff into fresh mushrooms for the community. They aim to make a greater variety of mushrooms accessible, with seasonal varieties including Lion's Mane, Chestnut, and several types of oyster mushrooms. The mushrooms are high in protein, vitamins, minerals, antioxidants, and fibre.
The name 'Largo Brae', meaning 'a slow or gentle slope' or 'a lazy hill', takes inspiration from the Jamberoo Valley. The farm acknowledges the Wodi Wodi people of the Dharawal nation as the traditional custodians of the land.
